Creamy Mac & Cheese with Parmesan Crunch Topping

  • 6 cups Whole wheat rotini pasta, cooked and hot
  • 1/2 cup All-purpose flour
  • 1 tsp Salt
  • 1 tsp Fresh ground pepper
  • 1 tsp Dry mustard
  • 6 cups Skim milk, divided
  • 1 pkg (250 g) Light cream cheese, cubed
  • 4 cups Shredded old Cheddar cheese
  • 16 Processed cheese slices
  • 1/2 cup Green onion, sliced (optional)
  • 6 cups Kellogg’s* Rice Krispies* cereal
  • 1 1/3 cups Parmesan cheese, grated


1. In large saucepan stir together flour, salt, pepper and mustard.
2. Whisk in 1/2 cup of the milk, forming smooth paste. Gradually whisk in remaining milk.
3. Add cream cheese. Cook and stir over medium heat until thickened and boiling.
4. Remove from heat. Gradually stir in shredded and sliced cheese, a little at a time, until melted.
5. Stir in pasta and onion, if using.
6. Spread into greased 13 x 9 inch baking pan Sprinkle with cereal and Parmesan cheese.
7. Broil 4-to-5 inches from the heat about 3 minutes or until golden.
