Granola and Greens Salad

A surprising addition to any salad.

Ingredients

  • 24 cups (6 L) (426 g) Baby kale blend
  • 24 cups (6 L) (426 g) Mixed Spring greens
  • 1 ½ tsp (7 mL) Salt
  • 6, cored and thinly sliced (about 2 lb) Red delicious apples
  • 6 cups (1.5 L) sliced Fresh strawberries
  • 3 cups (750 mL) Special K* Low Fat Granola
  • 1 ½ cups (375 mL) Plain low fat yogurt
  • ⅓ cup (75 mL) Avocado or olive oil
  • ⅓ cup (75 mL) Cider vinegar
  • 3 tbsp Liquid honey or pure maple syrup
  • 1 ½ tsp (7 mL) Salt
  • ½ tsp (2 mL) Pepper

Directions

Directions
1. Combine kale blend and spring mixtogether. Sprinkle with salt; set aside.
2. Dressing: Whisk together yogurt,oil, vinegar, honey, salt and pepper;set aside.
Assemble
Add apples, strawberries and granola to greens.
Toss with dressing to coat and serve.
