Directions
1. Whisk together pancake mix, coconut, milk, oil and eggs. Stir in granola and blueberries.2.Heat nonstick skillet or griddle over medium heat and spray with cooking spray. Ladle pancake batter and cook until bubbles appear.Flip over and cook other side until golden. Repeat with remaining batter.
3.Serve with dollop of yogurt and more granola if desired.
