Granola Cranberry Cookies

Sweet, crunchy cookies that everyone will love.

Servings: 24

Ingredients

  • ¾ cup (180 mL) softened Butter
  • ¾ cup (180 mL) packed Brown sugar
  • ½ cup (125 mL) Granulated sugar
  • 2 Eggs
  • 2 tsp (10 mL) Vanilla
  • 1 ⅔ cups (400 mL) Whole wheat flour
  • ½ tsp (2 mL) Baking soda
  • ¼ tsp (1 mL) Salt
  • 2 cups (500 mL) Special K* low fat granola
  • ⅓ cup (75 mL) Dried cranberries
  • ⅓ cup (75 mL) Chocolate chips (optional)

Directions

1. Beat butter and sugars until fluffy. Beat in eggs, one at a time. Beat in vanilla.
2. Whisk together flour, baking soda and salt. Stir into butter mixture.
Add Special K* low fat granola until combined. Stir in cranberries and chocolate chips, if using.
3. Scoop out dough onto parchment paper lined baking sheets and bake in preheated 350ºF (180ºC) oven for about 12 minutes or until edges are light golden.
Let cool completely before serving.

Bake:12 minutes per batch
