Raisin Bran Muffins

Products Used: Kellogg's Two Scoops Raisin Bran* Cereal
Servings: 24

Ingredients

  • 3 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 tbsp Baking powder
  • 1 tsp Salt
  • 6 cups Kellogg’s Raisin Bran* cereal
  • 2 1/2 cups Skim milk
  • 2 Eggs
  • 1/2 cup Vegetable oil
  • 1 cup Semi-sweet mini chocolate chips
  • 2 tbsp Granulated sugar
  • 1 tsp Ground cinnamon

Directions

1. Topping: Combine sugar and cinnamon; set aside.
2. Stir together flour, sugar, baking powder and salt; set aside.
3. In large mixing bowl, combine cereal and milk. Let stand about 2 minutes or until cereal softens.
4. Stir in eggs, oil and chocolate chips until well combined.
5. Add fl our mixture, stirring until just combined.
6. Divide into 24 greased or paper lined muffi n tins coated. Sprinkle tops with Topping.
7. Bake in preheated 400°F oven for about 20 minutes or until lightly browned.
