Southern-Style Succotash

Ingredients

  • 1 1/3 cups Onions, chopped
  • 1 cup chopped green bell pepper
  • 2 cloves Garlic, chopped
  • 2 1/2 cans (28 oz. each) Stewed tomatoes, drained
  • 2 1/2 cans (8 oz. each) Tomato sauce
  • 1/4 cup Dried parsley flakes
  • 1/2 tsp Red pepper flakes
  • 3 pkg (300 g each) Frozen whole kernel corn, thawed
  • 2 pkg (500 g each) Frozen, cut okra, thawed (optional)
  • 1/4 cup Butter
  • 1 tbsp Worcestershire sauce
  • 2 1/2 tsp Lemon juice
  • 1/2 tsp Red pepper flakes
  • 7 cups Kellogg’s Corn Flakes* cereal

Directions

1. Topping: In large skillet, heat butter, Worcestershire sauce, lemon juice and red pepper over low heat.
2. Add cereal, stirring gently until cereal becomes lightly browned and crisp; set aside.
3. Coat skillet with cooking spray. Sauté onions, green pepper and garlic. Add remaining ingredients. Cook, stirring occasionally until okra is tender.
4. Sprinkle with topping to serve.
